Trout with orange

Ingredients for 4 servings:
4 trout
3 oranges
1 tablespoon of flour
20 g butter
100 ml of liquid cream

For the vegetable stock:
1 onion
2 carrots
1 sprig of thyme
Laurel
Parsley
2 cups dry white wine
1 ½ water
Salt
Pepper.

For the vegetable stock: Peel the carrots and cut them into slices, chop the onion, we put them to cook in a pan, add the sprig of herbs, salt, pepper, white wine and water. When it boils, we gently simmer for 20 minutes. Remove from heat. We reserve.
Well cleaned trout and add them to the previous stock. When it starts to boil, add an orange juice and leave to cook over low heat for 20 minutes.
We put the butter to heat in a skillet to melt it, add the flour in the form of rain. We give a few laps, but without neglecting to take color, we then cover with 2 or 3 ladles of stock, add the juice of an orange and cream.
Taste of salt and pepper. Let Cook gently, stirring from time to time with the wooden spoon. A little cut into fine strips third orange peel. Save the best strips and chop the rest.
Just Peel the orange of their two skins, divide into segments, and add them to the previous sauce, leaving to cook for 1 minute.
